Preheat: 375°

  • 1 Cup Butter
  • 2 Cups Sugar
  • 2 Eggs – Well Beaten
  • 2 Teaspoons Vanilla
  • 1/2 Cup Sour Cream
  • 4 1/2 Cups Flour
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon Salt
  • 3 Cups Dates – Chopped
  • 1 1/2 Cups Water
  • 3/4 Cup Sugar
  • 1 Cup Walnuts – Chopped


Directions

Dough:

Beat butter until soft. Add sugar, eggs, and vanilla. Beat together until well creamed. Add sour cream and mix well.

In a separate bowl, stir together 4 1/2 Cups flour, baking soda, and salt. Add dry ingredients to creamed mixture. Mix well.

Chill dough overnight.

Filling:

Boil dates, 3/4 Cup sugar, and 1 1/2 C Water until thick. Stir in nuts and let cool.

Head oven to 375°. Roll chilled dough onto a floured surface to 1/8 inch thickness. Using a round cookie cutter, cut out circles. Place a heaping teaspoon of date filling onto each circle. Fold in half, lightly pressing edges together. Place on an ungreased cookie sheet.

Bake 10 to 12 minutes.
