Rocky Road Brownies

Preheat: 400°

  • 1 Cup Walnuts – Coarsley Chopped
  • 8 Ounces Unsweetened Chocolate
  • 1 Cup Butter
  • 5 Large Eggs
  • 3 1/2 Cups Sugar
  • 1 Tablespoon Vanilla Extract
  • 1 2/3 Cups Flour
  • 1/2 Teaspoon Salt
  • 1/2 Cup Semisweet Chocolate Chips
  • 1 Cup Walnuts – Coarsley Chopped
  • 1 Cup Semisweet Chocolate Chips
  • 2 Cups Mini Marshmallows


Directions

Preheat oven to 400°. Coat a 9x13 pan with non-stick spray.

Combine the unsweetened chocolate and butter in a small, microwave-safe bowl. Microwave on medium heat, 30 seconds at a time, until melted. Stir after each heating.

In a large bowl, beat the eggs and sugar at hight speed until light and fluffy, about 5 minutes. Add the melted chocolate mixture and the vanilla. Beat at low speed until combined. Slowly add the flour and salt, mix until just incorporated. Fold in 1/2 cup of the semi-sweet chocolate and 1 cup of the nuts. Pour into prepared pan.

Bake until edges are dry but center is still soft, about 35 minutes. Remove from oven. In a medium bowl, combine remaining 1 cup walnuts, remaining 1 cup chocolate chunks, and marshmallows. Sprinkle evenly over brownies.

Return brownies to oven and continue to bake until the chocolate is partially melted and marshmallows are soft and lightly browned, about 5 minutes. Transfer to a rack and let cool for 20 minutes.
