Creamy Tomato Basil Pasta

- 8 Ounces Bacon – Chopped
- 1 Onion – Chopped
- 4 Cloves Garlic – Grated
- 8 Ounces Mushrooms – Sliced
- 1 28-ounce can Crushed Tomatoes
- 2 Tablespoons Balsamic Vinegar
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/4 Cup Mascarpone Cheese
- 1/2 Cup Fresh Basil Leaves – Roughly Chopped
- 16 ounces Pasta – Cooked And Drained
Directions
Saute bacon over medium-high heat until crispy. Add onions and mushrooms and saute until tender. Add garlic and tomatoes and simmer over medium-low heat for 10-15 minutes. Add mascarpone cheese, balsamic vinegar, and salt and pepper, and stir until cheese is melted through. Remove from heat and add add basil leaves. Stir to combine and serve over pasta.
