Chicken Cacciatore

Directions

l whole 3 lb. chicken or chicken parts (2 legs, 2 thighs, 3 breasts)
1/4 cup olive oil or salad oil
Salt chicken and brown in oil. Remove to a plate and let cool. Then remove meat from bones, and return to pan.
Add: 1 cup chopped onion
1 2lb.-3oz. can Italian Stewed Tomatoes (Processed)
1/3 cup red wine vinegar (or to taste)
1 Bay Leaf
1/4 Teas. Thyme
1/4 Teas. Marjoram
Salt and Pepper to taste
About 1/2 cup water
Cover and let simmer for one hour. Remove cover to permit the sauce to reduce somewhat. Cook until tender. Serve with spaghetti.
