Kerry's (Low Carb) Crabcakes

Yeild: 4 cakes

  • 6 Oz. Crab Meat – Canned
  • 1 Egg Yolks
  • 2 Tbs. Whole Wheat Flour
  • 1 Tbs. Chives – Finely Chopped
  • 1tbs. Red Peppers – Finely Diced
  • 2 Tsp. Soy Sauce
  • 1 Tbs. Ginger – Grated, Fresh
  • To Taste Salt and Pepper


Directions

mix all ingredients. form into 4 patties. if they don't form well, add a little more whole wheat flour. fry in about 1/3 cup of oil (i use peanut oil, but you can also use canola) in deep sautee pan, about 2 minutes on each side, or until golden brown, on almost medium high. top with dollup of citrus ginger aoili (in sauce recipes) and diced red pepper. garnish with cilantro.


Notes

also very good served as an entree with a side of stir-fried zuchini, squash, and carrot tossed with soy sauce.
