Blueberry Muffins

Yeild: 1 Dozen
Preheat: 400°

  • 2 Cups Flour
  • 1/2 Cup Sugar
  • 3 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Lemon Peel – Grated
  • 1 Cup Blueberries – Fresh Or Thawed Frozen
  • 3/4 Cup Milk
  • 1/3 Cup Oil
  • 1 Eggs


Directions

Heat oven to 400°. Grease bottom only of 12 muffin cups or line with paper baking cups. Combine flour, sugar, baking powder, salt and lemon peel. Mix well. Stir in blueberries. In a small bowl, combine milk, oil and egg. Blend well. Add to dry ingredients. Stir just util dry ingredients are moistened.

Fill muffin cups 2/3 full. Bake at 400° for 20 to 25 minutes or until light golden brown.
