Bottled Apple Pie Filling

- 4 1/2 Cups Sugar
- 1 Cup Cornstarch
- 2 Teaspoons Cinnamon
- 1/2 Teaspoon Nutmeg
- 1 Teaspoon Salt
- 10 Cups Water
- 3 Tablespoons Lemon Juice
- 3 Drops Yellow Food Coloring
- 3 Teaspoons Lemon Peel
- 6 Pounds Apples
Directions
Blend sugar, cornstarch, cinnamon, nutmeg, and salt. Stir in water and cook and stir until thick. Add lemon juice, food coloring, and lemon peel. Peel and slice apples. Fold apples into mixture and heat thouroughly. Pack into sterilized hot quart jars, leaving 1 inch space. Put into hot water bath and process for 20 minutes.
Notes
One quart makes a 9-inch pie.
