Mimi's Carrot Bread

Preheat: 350°

  • 1 1/2 Cups Flour
  • 1 Teaspoon Baking Soda
  • 2 Teaspoons Baking Powder
  • 2 Teaspoons Cinnamon
  • 1/2 Teaspoon Salt
  • 1 Cup Oil
  • 1 1/2 Cups Brown Sugar – Firmly Packed
  • 3 Eggs
  • 1/2 Cup Walnuts – Chopped
  • 1/2 Cup Pineapple (Crushed) – Drained
  • 1/2 Cup Raisins
  • 1/2 Cup Carrots – Finely Shredded


Directions

ift flour, soda, baking powder, cinnamon, and salt together into a mixing bowl. In a separate bowl, whisk together the oil, sugar, and eggs. Stir the liquid mixture into the flour. Mix well. Add nuts, pineapple, raisins and carrots and stir. Grease and flour a square 9-inch pan. Fill 2/3 full with batter. Bake at 350° for 40 minutes.

Great bread! Loved it!

This recipe has too much baking soda and powder and will not rise like Mimi's muffins and bread does. Try reducing it.
