Fudgy Chocolate Cake

- 3/4 Cup Butter
- 2 Ounces (2 Squares) Chocolate
- 2 1/4 Cups Flour
- 2 Cups Sugar
- 1/4 Cup Cocoa
- 2 Teaspoons Baking Soda
- 1 Teaspoon Salt
- 1 3/4 Cups Buttermilk
- 2 Eggs – At Room Temperature
- 3/4 Cup Whipping Cream
- 1 1/2 Cups Semisweet Chocolate Chips
Directions
Preheat oven to 350°. Grease and flour two 9-inch round cake pans. Iin a saucepan, melt butter and chocolate, stirring, over low heat.
Combine flour, sugar, cocoa, baking soda and salt in a large bowl. Add chocolate mixture, buttermilk and eggs and beat on low speed for one minute. Increase speed to high and beat until light and fluffy, about two minutes.
Divide batter evenly between cake pans. Bake until cakes spring back when gently pressed, about 25-30 minutes. Cool for 5 minutes in pans then invert onto a wire rack.
Meanwhile, bring cream just to a boil. Remove from heat and stir in chocolate chips. Mix until frosting is smooth and starts to thicken. Frost cake and enjoy.
